You can go the route where you saute the onion and make the sauce in the pan prior to adding it all to the crock-pot or you can just dump all the ingredients in before you add the chicken. It was HOT and muggy this weekend. I needed something to help cool down. This recipe was just the trick. Recipe here: http://blog.feelgreatin8.com/homemade-strawberry-frozen-yogurt/ I halved the whole thing when I made it because I was worried the blender would be difficult to use with this. I am so glad I did, because it was time consuming with the frozen strawberries. I would definitely make this again with fresh berries and a little more honey as the strawberries are a bit tart. -Caitlyn Let's keep the quinoa train going! I made this salad yesterday. DELICIOUS, super quick, and easy! It is packed full of veggies and chickpeas for protein. Here's the recipe: https://www.organizeyourselfskinny.com/2016/01/12/7-minute-quinoa-power-salad/ I did not add cucumbers because I forgot they were on my grocery list this week, oops. I also threw the chickpeas into the oven for about 25 mins at 400 degrees with some olive oil and cumin. I also increased the quinoa because why not? This salad is filling, nutritious, and did I mention easy?! Happy eating!

A new staple in my diet is quinoa. It's versatile and easy to make once you get the hang of it! The vegan buddha bowl is packed with healthy, nutritious foods including... you guessed it...quinoa.

When I made this recipe I was missing a key tool, a blender. So I actually did not make the red pepper sauce. Instead I cut the pepper up, sauteed it, and added it to the quinoa. I can't wait to try it with the red pepper sauce!!

Ok, so I am going to kick this off with probably my favorite recipe I have started making over the last few months. I LOVE mexican food. If I could eat it for breakfast, lunch, and dinner I totally would. I mean who can turn down a good bowl of chips and salsa, guac, and margaritas? No one. If they tell you they can they're a liar and should not be trusted.

I know what you are thinking...really no meat? Trust me you don't even need it. The most time consuming part of this recipe is prepping the sweet potatoes. Also time saving tip, if you live near a Whole Foods grab some of their prepared pico. I now sadly do not live close to a Whole Foods so I just used fresh tomato and cilantro on the toastadas below. I love this recipe because it is easy and it tastes great when you first eat it and later when you have leftovers!
