Let's keep the quinoa train going! I made this salad yesterday. DELICIOUS, super quick, and easy! It is packed full of veggies and chickpeas for protein. I also threw the chickpeas into the oven for about 25 mins at 400 degrees with some olive oil and cumin. I also increased the quinoa because why not? This salad is filling, nutritious, and did I mention easy?! Happy eating!

When I made this recipe I was missing a key tool, a blender. So I actually did not make the red pepper sauce. Instead I cut the pepper up, sauteed it, and added it to the quinoa. I can't wait to try it with the red pepper sauce!!
